A Tale of Two Spirits
The Aviator cocktail has long been a favorite among classic cocktail connoisseurs, thanks to its delicate blend of floral, citrus, and herbal notes.
Traditionally made with gin, it showcases the botanical complexity of the spirit — a crisp, dry canvas that enhances the maraschino and crème de violette’s subtleties.
But innovation in mixology is about discovery. Swapping the gin for Sotol Blanco offers a bold twist, introducing earthy, grassy tones with a hint of smoke.
This desert-native spirit, distilled from the Dasylirion plant, adds depth and terroir to the otherwise airy cocktail.
A Study in Contrast
Where gin delivers refinement and a polished edge, Sotol Blanco leans into rugged sophistication — it’s wild, untamed, and distinctly northern Mexican. The contrast between the two spirits invites a side-by-side comparison.
Both versions celebrate the bright acidity of lemon and the mysterious sweetness of maraschino liqueur, but the finish couldn’t be more different: one clean and crisp, the other lingering and rustic.
Whether you prefer the structured elegance of gin or the adventurous spirit of Sotol, the Aviator provides a versatile template to explore.
Why Choose One?
There’s no need to pick sides. Offering both versions allows drinkers to appreciate how a single swap can change the entire personality of a cocktail. Gin lovers may find a new favorite in Sotol, while Sotol fans may discover a newfound respect for gin’s botanical charm.
This duality not only elevates your cocktail menu but also opens the door to new conversations around tradition, innovation, and terroir.
